How does water fit into making whisky in the first place?
It helps to see the journey before the definitions. Whisky is distilled at high strength, matured in oak for years, and then almost always diluted with water before bottling. Under the Scotch Whisky Regulations 2009, the spirit must be distilled at less than 94.8% ABV and bottled at a minimum of 40% ABV — so between the still and the shelf, a large amount of water is deliberately added back. The water that does that job is not the distillery’s famous spring water; it is purified, demineralised blending water chosen precisely because it carries no flavour of its own. As one distillery water specialist puts it, at this stage producers are “very wary of changing the character in any way, so we use demineralised water” (Master of Malt). What do the strength terms mean — ABV, proof, cask strength, bottling strength?
These are the numbers on the label, and they are the ones buyers most often confuse.
- ABV (alcohol by volume) — the percentage of a liquid’s volume that is pure ethanol, measured at 20°C. A 40% ABV whisky is 40% ethanol, 60% water and dissolved compounds. ABV is the international standard strength measure today.
- Proof — the older way of stating strength, and the source of most confusion because two systems share the word. In the United States, proof is exactly twice the ABV, so 40% ABV is 80 proof and 50% ABV is 100 proof (Alcohol proof, Wikipedia). The historic British system was different: 100° proof equalled about 57.15% ABV, the strength at which gunpowder soaked in spirit would still ignite, with ABV multiplied by roughly 1.75 to give degrees proof. The UK dropped proof for ABV in 1980.
- Degrees proof (Indian/UK usage) — because India inherited the British system, older Indian labels state strength in degrees proof. This is why the traditional Indian bottling strength of 42.8% ABV works out to 75° proof (42.8 × 1.75 ≈ 75). Indian whiskies today span roughly 42% to 71% ABV (Indian whisky, Wikipedia).

What are cut points and the distillation cuts?
During distillation, the liquid coming off the still changes character continuously as its strength falls. The distiller divides that flow into fractions and keeps only the good part — the decisions about where to switch collection vessels are the cut points.
- New make (new-make spirit / white dog) — the clear, unaged spirit that comes off the still and goes into the cask. Everything below is about carving the new make out of the total distillate.
- Foreshots / heads — the very first spirit off the still, high in volatile, solvent-like compounds. It is astringent and, in excess, unpleasant or unsafe, so it is separated and set aside (Whisky Advocate). “Foreshots” is the Scottish term; “heads” the American one.
- Hearts / middle cut — the clean, high-quality centre of the run that becomes whisky. A malt distillery’s heart cut typically runs from around 75% ABV down to roughly 55–60% ABV as collection proceeds (Whisky Advocate).
- Tails / feints — the last fraction, heavy with fusel oils and lower in alcohol; collected separately and usually redistilled with the next batch rather than discarded.
- Cut point — the exact moment a distiller stops collecting one fraction and starts another. Cut points are set by strength, temperature, aroma and taste, and they are one of the most important flavour decisions a distiller makes: move the middle-cut boundaries and you change the spirit’s whole character (Decanter).
- Congeners — the aroma and flavour compounds (esters, aldehydes, phenols, fusel oils) that ride along with the ethanol. Cut points are, in effect, a way of selecting which congeners make it into the cask.
What are the water and proofing terms?
This is the vocabulary that matters most when you are buying or specifying the water itself.
- Proofing / reduction / cutting — three names for the same operation: adding water to lower a spirit’s ABV to its target. “Proofing” is common in the US, “reduction” in Scotch circles, “cutting” everywhere.
- Blending water — purified water made specifically for proofing and finishing spirits. Its defining quality is the absence of taste: it should change strength and leave aroma and flavour untouched.
- Demineralised water — water with its dissolved minerals removed, usually by reverse osmosis followed by deionisation, leaving near-zero mineral content. This is the standard water for reduction because it adds no mineral flavour of its own.
- Reverse osmosis (RO) — a purification method that forces water through a membrane fine enough to strip out most dissolved solids; the first stage in making demineralised blending water.
- Deionisation (DI) — an ion-exchange polishing step that removes the last dissolved ions RO leaves behind, taking the water close to zero TDS.
- TDS (total dissolved solids) — the combined weight of everything dissolved in the water, in mg/L (numerically the same as parts per million, ppm, in fresh water). For blending water, low TDS is the headline quality signal — the lower the number, the less the water will taste of anything.
- Hardness — the calcium-and-magnesium share of TDS, reported as equivalent calcium carbonate. The U.S. Geological Survey rates water soft below 60 mg/L and very hard above 180 mg/L. Hard water carries the minerals most likely to leave a taste in a finished spirit.
- ppm (parts per million) — the unit you will see used interchangeably with mg/L on a spec sheet.
- Floc — the fine, cloudy haze that can appear when calcium in the proofing water reacts in the diluted spirit. It is a visible sign that the water was not mineral-free enough, and a reason distilleries insist on demineralised water. There is a physical reason all of this care matters. Research published in Scientific Reports showed that adding water lowers the ethanol concentration and drives aroma compounds such as guaiacol toward the surface of the liquid — which is precisely what makes a diluted whisky more expressive on the nose (Scientific Reports). That delicate aromatic release is exactly what a stray mineral flavour would spoil.
What happens to strength and volume in the cask?
Two more terms explain why the strength going into the cask is not the strength coming out.
- Angel’s share — the whisky lost to evaporation through the porous oak during maturation. In Scotland’s cool, damp climate the loss averages about 2% of the cask’s volume per year, but in hot climates it is far higher (The Glenlivet). This matters for Indian and other tropical whiskies, where evaporation can run several times the Scottish rate, concentrating the spirit faster.
- Filling strength — the ABV at which new make is put into the cask (often reduced with water first, commonly around 63.5% ABV in the Scotch tradition).
- Chill filtration — a cold-filtering step, unrelated to proofing, that removes fatty compounds which would otherwise cloud a whisky bottled below about 46% ABV. It is a separate process from adding blending water, but the two are often discussed together because both shape the final bottle.
