The Build

Pressed, not extracted.

Most commercial ginger ales use ginger extract — concentrated ginger flavour added to a neutral base. The result is consistent but flat: ginger-flavoured sweetness without the natural heat, layered complexity, or variable character of real ginger root.

We use fresh ginger root, cold-pressed. The pressing process extracts the juice, the aromatic oils, and the natural heat compounds (gingerols and shogaols) without the bitterness that comes from cooking. Each batch uses a fixed ratio of Rajasthani ginger — a variety known for its high gingerol content and balanced heat.

The result is a ginger ale with genuine heat that builds slowly on the palate — not artificial warmth that hits immediately and fades. That natural heat is what makes this ale work alongside aged rum and tequila. It mirrors the spirit's own spice rather than competing with it.
