Equilibrium does not care which liquid you pour into which — a 40% ABV spirit is a 40% ABV spirit however it got there. But the journey is not reversible. Along the way, parts of the liquid pass through strengths the finished product never sees, and some of what happens in those moments never undoes. Here is what the evidence actually shows about order, rate and agitation, in a proofing vat and in a glass.

Pour water into pastis, ouzo, raki, arak or absinthe and it turns white in seconds — no shaking, no emulsifier, no heat. It is the same physics that makes an unfiltered whisky go hazy, running deliberately instead of accidentally. Here is the mechanism, the arithmetic of how little anethole water can actually hold, and the evidence that the temperature and mineral content of the water you add change the cloud you get.

A demineralised water can be certified at 18.2 MΩ·cm, sub-ppb on metals and sterile on plate count, and still arrive holding about eight milligrams of dissolved oxygen per litre — because no purification step on a distillery skid is designed to remove it. Here is how much oxygen proofing water actually delivers into a bottle, why it almost never matters in whisky and sometimes matters a great deal elsewhere, and what other drinks industries do about it.

Put a microlitre of bourbon on glass at cask strength and it dries into a featureless film. Dilute the same whiskey to 20–25% ABV and it dries into a web of strands distinctive enough to identify the brand more than 90% of the time. The pattern is made of what the spirit carries — which is precisely why the water you dilute with has to carry nothing.

Calcium gets the blame for haze, but it is the trace metals that stain, catalyse and darken. Iron is detectable by taste at 40 µg/L in demineralised water, manganese coats pipework at 0.02 mg/L, and copper — the distiller's friend inside the still — becomes a liability the moment the spirit leaves it.

The world's best-selling spirit is roughly four-fifths water, Japan has a dedicated word for the water added before bottling, and China's largest spirits category treats dilution as a process step with its own quality problem. Asia's three biggest categories dilute harder than whisky does — which is exactly why their water is specified, filtered and, in one case, written into law.
