What water do you rinse the proofing tank with? CIP, the final rinse, and the step your blending water specification stops short of
A distillery will argue for weeks about the conductivity of the water it proofs with, then rinse the tank that water goes into with whatever comes out of the mains. The final rinse of a clean-in-place cycle is the last liquid a vessel touches before spirit does — it is the step that decides whether the cleaning chemicals actually left, and it is the one step of the water system almost nobody specifies.
