What happens to a distillery when the water runs out? Abstraction licences, drought, and the water in your bottle
In September 2025 thirteen Scottish catchments — the Lower Spey and Findhorn among them — hit the level at which a regulator can suspend a distillery's licence to take water from the ground. Almost none of that water was destined for a bottle; the overwhelming majority is cooling water. But an abstraction restriction does not distinguish between the two, and a site that cannot cool its condensers cannot run its stills. Here is how water scarcity actually reaches the spirit, in Scotland and in India, and which part of the risk a producer can design out.
